Poached eggs with hollandaise sauce is by no means a light breakfast, but I find it easy to make and we love to eat these on a laid back morning when we’re not in a rush to get out the door. If you’d like to take this recipe a step further you can make Eggs Benedict by splitting a muffin or roll, toasting it and topping it with ham or bacon, the poached eggs and garnishing with the hollandaise sauce. Delicious!
