Mashed Potato Rounds [ratings]

Are you wondering what to do with those left over potatoes? Are you looking for a fun side-dish to go with a red meat? Try these fun potato rounds for dinner.

Total time: 20 minutes

Ingredients

  • 1 tablespoon butter
  • ¼ cup milk
  • 3-5 boiled potatoes
  • salt and pepper to taste

Directions

  1. Combine the milk, ½ tablespoon butter and potatoes in a large pot. Mash the potatoes with a potato masher until only slightly chunky.
  2. Make 1-1½ inch potato balls and flatten them into rounds
  3. Melt remaining butter over medium heat in a large skillet and brown the potato rounds on each side. I usually flip each round 2-3 times. It’s important that you let the potato round cook thoroughly on each side, otherwise the potato round will come apart when you try to flip it. I highly recommend a non-stick skillet to prevent the potato from sticking.
