My first rule of thumb is that anything you make out of fresh ingredients is guaranteed to be healthier than anything that comes out of a can or jar. My second rule of thumb is that the more ingredients you leave raw, the healthier the food, because the heat will destroy a lot of the vitamins and other vital nutrients. Everything in this recipe is raw except for the chicken and the Worcestershire sauce. This salad is perfect for a cool summer evening, when you want a refreshing crispy salad and you have the chicken to warm you up.
