While the recipe below calls for specific meats and vegetables, you should absolutely experiment with the left over veggies and meats that you find in your fridge. C’mon, who doesn’t love green beans? They taste great and they’re super healthy for you. Need more convincing? This green bean recipe is a great side dish for just about anything. If you are looking for something light, I sometimes eat this with a few other vegetarian side dishes, and call it a meal! Not to mention, green beans are a good source of vitamins and minerals.

If you love a good salad with your meals read on, this vinaigrette is the best you’ll make and has always been a huge hit with all of our guests. It’s so easy, and you can pretty much always find what you need in your cupboard! In the recipe below, I’ll explain how to make the dressing, feel free to toss it with your favorite salad ingredients. My personal favorites are: buttercrunch or red-leaf lettuce, vine tomatoes, and if I find some in the fridge, I’ll throw in a sliced carrot and quartered radishes. Yumm!

Yes, those delicious golden fries are really Belgian. Dating back as far as 1680 Belgians have been enjoying fries which are deep-fried twice to give them a soft core and golden-crisp outside. In Belgium, fries can be bought at fry-stands and are eaten out of a conical paper-bag – often accompanied by a variety of sauces. Alternatively, fries are eaten as a side with steak, stews, and mussels. Remember, you can’t make a good fry out of just any potato, the best potatoes to make Belgian fries are Bintjes but Russet potatoes and Yukon Gold potatoes make a fine alternative. Follow the simple steps below to make those perfect, delicious fries every time!

It’s hard not to love figs.  They have a very delicate flavor, and are great as appetizers as well as desserts.  This recipe complements the fig with a mild goat cheese that gives this dish a rich flavor, and a serrano ham that gives your tongue a sharp wake-up call!

This Neapolitan summer dish is perfect on a warm day and has to be one of the easiest dishes you’ll ever make. It’s at its best when made with flavorful vine-ripened tomatoes, young basil (small leaves!) and fresh mozzarella. You’ll be amazed at how deliciously simple and tasty this dish is. On hot summer days you’ll find us eating insalata Caprese in a shady spot in the yard with some fresh crunchy bread and a cool drink. Thank you Capri for this wonderful dish!
