The most easy and straightforward recipe for soup. A great way to get your family to eat some vegetables! The carrots and caramelized onions give this soup a sweet taste, while a small amount of ginger balances that sweetness out by giving it a sharp, gingery flavor in the background. Simple, and perfect.

If you love a good salad with your meals read on, this vinaigrette is the best you’ll make and has always been a huge hit with all of our guests. It’s so easy, and you can pretty much always find what you need in your cupboard! In the recipe below, I’ll explain how to make the dressing, feel free to toss it with your favorite salad ingredients. My personal favorites are: buttercrunch or red-leaf lettuce, vine tomatoes, and if I find some in the fridge, I’ll throw in a sliced carrot and quartered radishes. Yumm!

Roasted Bell Pepper Risotto

This risotto isn’t your usual rich and creamy risotto.  It’s still creamy, but it doesn’t taste like a heart attack because of the hint of tartness coming out of the bell pepper.  Fresh parsley gives this risotto an aromatic touch.  Makes 3-4 servings.

Spicy White Bean Casserole

This white bean casserole is a great welcome into the fall season and works great when served with chicken or pork.  The parsley dressing tastes incredible with the casserole and resembles a pesto sauce. You might even consider adding some chopped pine nuts to the parsley dressing to really bring out the flavor. Makes 2-3 servings.

caprese [ratings]

This Neapolitan summer dish is perfect on a warm day and has to be one of the easiest dishes you’ll ever make. It’s at its best when made with flavorful vine-ripened tomatoes, young basil (small leaves!) and fresh mozzarella. You’ll be amazed at how deliciously simple and tasty this dish is. On hot summer days you’ll find us eating insalata Caprese in a shady spot in the yard with some fresh crunchy bread and a cool drink. Thank you Capri for this wonderful dish!

wheat rolls

On our last trip to Germany we found these cheap rolls at numerous bakeries in Berlin. They were always fresh and tasted delicious with the local deli meats (leberwurst amongst others) and cost around 16 cents a piece. When we got home I decided to make my own version of these rolls and came up with the recipe below. In Germany these rolls where always made with white flour only, my small adaptation is to add a bit of wheat flour, yum!

Ever wake up on a Sunday morning with a craving for a stack of pancakes topped off with some maple syrup? Add a cup of coffee and NPR playing in the background and I’d tell you my day is off to a good start. Pancake batter is easy to whip up from scratch, and making them is always an opportunity to have fun “flipping” them in the air. Enjoy your breakfast!
